what happens when they change the clock from 2 am to 1 am?
do they get jipped that "lost" hour's pay?
do they have to work nine hours that day instead of their usual 8?

They do work nine hours, but they are entitled to 1 hour at 1 1/2 times their hourly rate (O.T. pay).

At the place I work, people get paid for 9 hours, 8 regular time and an hour at time and a half.

They still work nine hours so they get paid accordingly. The conversion from DST to Standard Time is taken into account. Or least it's supposed to be by law.
