Ammonium Nitrate doesnt even react with water. It is only ionized there become NH4+ ions and NO3- ions.
Hence, of course, it could be reversed.

Ammonium salts are very sensitive to heat, and split up all too easily. Thus as soon as you try to get solid ammonium nitrate by boiling a solution of it, the moment it crystallises you will get ammonia and nitric acid.
