Two factors to consider. First, if the Instructor or Teacher is prepared to teach the subject, then any subject they teach is their easiest subject. If, however, they are not prepared to teach then that is their most difficult subject (spoken from personal experience). Second, the students pre-conceived notions about the class, their preparation for a specific class and their overall approach to education. (Speling is my most difficult from both factors!)

I think that the most difficult subject to teach is Maths, the majority of us have a natural fear of numbers but are threatened because we know that in adult hood the maths qualification is necessary for job applications. The easiest subject is probably a MFL. To be honest it just involves a lot of colouring in and repetition of key words

I find English grammar the hardest to teach. I love it and find it easy to use, but trying to get students to understand the different parts of speech, the tenses of verbs, the varieties of sentences, how to form a good paragraph or essay, and the endless word choices and spellings is very difficult.
On the other hand, I find Math the easiest to teach. Math has rules which remain unchanged. There may be more than one way to get to an answer, but you must follow the rules to get there.

That is a tough question. If you are innovative any subject matter can be enjoyable. On the back end, the most paperwork falls on special ed and English. The special ed teachers have so much paperwork to do in regards to IEPs and the such. English teachers usually teach reading, grammar and writing which ends up creating a large amount of papers to grade.

If you know the subject it shouldn't be difficult to teach. Maths is probably the worst to teach because most kids hate it.

No subject is easy or difficult itself so that it depends on how much beauty of the subject you have understand. Math may be easy for me to teach but it may be difficult for others.

I can only speak for my subject (English, ages 11-18). English is easy to teach in the sense that it is often easy to interest kids and learning activities are very varied (role plays, reading variety of texts, writing variety of texts, discussion) but there are also ways in which it's very hard to teach: there are fewer 'right answers' or things kids can simply memorise. It's also one of the heaviest subjects for marking - which takes hours. You can seldom just tick. Pieces of work to be marked are usually long (essays, etc.) and you need to comment on lots of things. Badly written pieces can be frustrating to try and make sense of. But it's a very rewarding subject to teach overall.
