Enzymes, as we know, are biological catalysts. They are involved in biochemical reactions in various life processes. The enzymes roll is to catalyze (break down) biochemical substances. There are thousands of enzymes out there of course, but a few of them that are used in the food technology are: alfa-amylase, beta-amylase, amyloglucosidase, these types of enzymes are designed to catalyze starch, using these enzymes will give us HFCS (High Fructose Corn Syrup) which is basically a complex sugar (starch) that was broken down into smaller sugars (glucose and such). There are also lipases (enzymes that catalyze lipids or fats) and then proteases(enzymes that catalyze proteins). In the example of few infant formulas, they add some proteases to help the infant (or baby) to digest the food because babies usually don't have enough enzymes in their system to digest all foods, they can usually digest casein (milk protein), lactose (milk sugar) and stuff like that but the proteins that are in the formulas they can't digest them so they add these proteases to help them catalyze the proteins into amino-acids.

enzymes are great catalysts and plays a vital role in food technology as well as medicine.since enzyme technology helps to get different byproducts as a result of enzymatic catalytic action.so i think a search for enzymatic catalytic action in food technology in any search engine will help u get ur answer.
