I love Shannon Hale! Have you read the Princess Academy? It's also by her (unconnected to the others). There is also a third book, another companion, to the Goose Girl, it's called River Secrets.

You should read Robin McKinley. Spindle's End is her 'retelling' of Sleeping Beauty. She has two retellings of Beauty and The Beast. One is called 'Beauty' and the other is called 'Rose Daughter.'

Mira, Mirror by Mette Harrison is quite good.
Enchantment by Orson Scott Card.
The Confessions of An Ugly Stepsister by Gregory Maguire.
Ella Enchanted by Gail Carson Levine.
Donna Jo Napoli is another great author. Although her books are shorter than some of the above recommended, they are very well written. (Beast, Zel, The Magic Circle, etc.)

Also this is very IMPORTANT...you should check out this website:
http://www.surlalunefairytales.com/
It has the traditional fairy tales and provides information on modern retellings (novelizations, short stories, etc) of classic tales! It will give you even more recommendations.

Try Emily Drake if you like Harry Potter. For the rest, just buy books or read books in the library by adult authors. Try Dennis McKiernan, Jane Lindskold, H. Beam Piper. David Weber, Mercedes Lackey, James Clemens, Andre Norton, etc. Go to Baen's Books on the web. Sign in on that site. After getting approval you can check out authors, titles, go to the chat room or to the Bar and question and answer other people and real authors too, they often frequent these sites for feedback. And, if you so choose you can read and download free ebooks. Have fun, happy reading.

I've heard Gregory Maguire's stuff is really good -- he takes fairy tales and retells them. "Wicked" is probably the best known, but I haven't read them. I just know what other people have said.
I loved, Loved, LOVED "Fly By Night" by Francis Hardinge and Lloyd Alexander's Westmark trilogy. Both have fairy tale elements and are set in fantastical realms but do not contain wizardry, dragons, et cetera. But they're really, really good.
Have to recommend "A Wrinkle in Time" by Madeleine L'Engle, along with its sequels. My favorite was "A Swiftly Tilting Planet," but they're all good.
Also, Diana Wynne-Jones' books are very good and often contain fairytale elements. The Dalemark quartet has an especially fairy-like feel to it, as to the Chrestomanci books.
Enjoy your reading, and I hope this is helpful!

-Noughts and Crosses - severe yet very solid reads. - Discworld - they make me snort so frustrating. That guy has such an outstanding mind's eye. - The Northern lighting fixtures furniture trilogy with the help of Philip Pullman - truly solid fable sequence. and you sound such as you will definitly like the sting Chronicles. they're set in a fable international stated as part and that they are jsut incredible - a lot of categories of creatures. The maps they draw are fanstastic and each factor of their international, top right down to the geography and the marketplace are so properly concept out. there is happiness, there is unhappy bits, there is each thing: cliched yet authentic, in spite of if there is not any sappy stuff in any respect. i decide for to advise analyzing them so as of the Twig Saga, the Quint Saga and then the Rook Saga, via fact they only pass properly. chuffed analyzing!

Try the Phillip Pullman trilogy if you haven't already...'His Dark Materials' they're amazing and maybe a slight step up from what you've been reading, adding a little more of a challenge into the bargain!

Noughts and Crosses by Mallory Blackman is definitely worth reading. There is a sequel too if you enjoy it. Nice and thick but has that unputdownable quality!
