You are mixing up the properties of light and the properties of color.
Black is the absence of light and white is all the colors of light.
When you're talking about color (take paint for example,) black is all colors and white is the absence of color. Gray paint is a mixture of white and black paint.

White light contains all colors, at a high enough intensity that it appears bright to you. Gray means an equal mix of all colors, but at a reduced intensity so it doesn't appear bright.
For example:
On a computer, you refer to colors by red green and blue values, like this [red, green,blue]. The highest value a color can have is 255. For example [ 255, 0, 0] would appear bright red; [50, 0, 0] would be a darker red color. [ 0, 255, 0] would appear bright green, etc.
So [0, 0, 0,] is all black (each color is set to zero), and [255, 255, 255] appears white on the screen. If the color is [ 50, 50, 50] you would have a darker gray (all colors are present, but at low intensity). If the color is [ 200, 200, 200] you would have a lighter gray [all colors present at equal, but at higher intensity].

Colors are expressed as two quantities, a hue and an intensity.
Grayness is not fundamentally different than yellowness. You can have shades of yellow from bright to light; ditto with gray
