The flowers/posy the bride /maids carry symbolise the fertility/fecundity of the union.
Is it that you don't want to wear rings?
Bangles have been used instead of rings in the past: but they can be easier lost/inconvenient.
When I couldn't wear my ring I used to put it on a chain and wear it like a pendant.
Do you want everyone to see your symbols? If not matching tattoos could be really nice!

There are the various celtic knots that symbolize love and commitment. I would imagine most cultures have that sort of thing.

there are cuffs (bracelets) now (they attach to your wrists with a small screw driver) .. you can get a tattoo (not advisable) of your spouses name, or you can wear a necklace with 1/2 a heart w/ each other wearing the others name.

in gypsy tradition all of your friends tie knots in a rope at your wedding, you are suppose to keep it close to your door so that you and every body else can see how blessed your marraige is every time you see the rope

I'd go for necklaces,,,you could do tattoes but they are SOO permanant that I wouldn't do that....
