What is her education level, and what are her skills? That will tell her what field to go into. If she doesn't have much of an education and she doesn't have any technical skills or trades, then it will be hard to find.

Your Mom's job should be something that makes her happy not your boyfriend. When I retired a little over a year ago I was making roughly $70,000 a year as Inspection &
Repair foreman subway mechanics/equipment control desk for the Toronto transit commision. The equivalent job in New York City pays over $350,000

Jobs generally pay depending on what they demand, higher education, responsibility, danger or worse job conditions usually mean more money. Also supply if you have rare but in demand skills you usually command a higer income. If you can be easily replaced your job is usually low paying.

You don't say where you are so I can't say much about what jobs are available but what I said above is generally true. The company I worked for completely did away with adminastrative assistants several years ago giving people who had them computers and making them responsible for their own administration.

If you work as a nurse, your pay check will be close to that. But if you work as a head nurse, that will clinch it.
