Potatoes retain alot of water in their natural state. If you were to add salt into the soil of which the potatoe is growing you probably wont get a crop at all. Salt is very corrosive and can cause a depleation of water that is suppose to be going into your crop.

Salt will kill off the plant. Thats why you never see potatoes growing at the beach.
