If the weather's good you could wander up the hill at the north end of Regents Park (I think it's called Primrose Hill). From the top you get a fantastic view across the city. When you've done that you could wander down to a cafe on the way to Camden Town and have a good coffee and read the papers.
If you're culturally minded you could visit a gallery - Tate (Britain or Modern), National Portrait Gallery, etc. Or the V&A museum.
A good walk would be along the south bank of the Thames from Waterloo station (London Eye) to London Bridge. You get good views of St Pauls etc and Borough Market is a cool place to visit at weekends. You'd be passing Tate Modern too.
Battersea Park is nice too.
Hope this gives you some ideas.

Try a street market. This link will help you figure out what markets are open on Sunday and what sort of atmosphere. http://www.streetsensation.co.uk/markets.htm The Columbia Road (flower) market and Camden Lock market are lots of fun.
Churches are a good option too. If you are attending services you won't be charged tourist fees to get inside places like St. Paul's cathedral.

Go to a gallery or museum, go for a walk, go for breakfast and read the papers.
Greenwich park is really nice this time of year with all the autumn leaves and deer park and there is a nice little indoor market nearby and the planetarium.

Go to the ICA, have coffee, watch a film, look at some art and when you are done there, cross the road and walk about St James Park. I used to work there and miss it loads, that's what I'd do anyway.

Go to the nearest church or cathedral and soak in the history, as well as say a few prayers for people you know who need spiritual help ... you'll feel SO much better for having done this.
