Because cows, like most animals, shed skin cells on a regular basis. After a time the cells that were stained will simply be shed.

real cows dont spill stuff on themselves like red wine, coffee and ink. Also their skin isstill alive (like ours) and renewing itself, damaged skin falls off. Leather coats are dead.
