Chewing as we humans know it is a feature of not only the mastication muscles (massetter, temporalis, buccinator, pterigoids, etc) but also a feature of the 4 kinds of teeth found in mammals which are highly specialized for very specific slower processing mechanical digestion technique: incisors cut, canines, tear flesh, premolars and molars crush-grind and help with chewing a cud and thus help with MECHANICAL digestion of food before entering the GI tract.

Sharks are "eating machines" that simply bite-slice and swallow asap. They don't need the fancier processing of food before it is swallowed. Their GI tract is much simpler than mammals and does not ahve as many organs of digestion.

I would think it's cause all of their teeth are sharp instead of flat like our back teeth are. Their teeth are made for tearing meat.
