If you crack it open and it smells like a waste water treatment plant, you know it's past its "use by date".

As long as it's still fresh, nothing. The 'Sell by' date is a statutory requirement in the U K so that shops sell their goods whilst they are still as fresh as they are supposed to be. In reality there is a tolerance time so that produce does not go bad next day. Eggs, if kept at room temperature, will last for a week or more after the date. To test if they are fresh drop them in cold water. If they float they are bad.

Answers up to pres are good - sell by dates are usually set with large margins of safety. A good test of an egg is to put it in water - if it floats, bin it. The gases of decomposition are what makes it float.

I've eaten eggs that were a couple of months old. If they smell bad don't eat them. We worry way too much and throw away far too much food.

eggs are good for a week after the sell by date, and eggs kept at the proper temperature aren't as perishable as most ppl think. if it smelled bad and you ate it, that's your own fault though.
