I just watched a show about Halloween. Carving pumpkins comes from the tradition of carving turnips in Ireland for Samhain (which is the pagan celebration that Halloween is taken from). People believed if they carved turnips and carried them with a lit candle in them at night, the spirits would follow them. When Halloween, centuries later, came to America, pumpkins were much easier to carve than the turnips.
