There are actually three different kinds of neutrinos (plus their anti-particles). The sun produces energy by nuclear fusion which starts with hydrogen and winds up with helium with multiple steps in the process. During the process, certain types of neutrinos are emitted. Measuring the types and number of neutrinos emitted from the sun would verify the theoretical predictions for the fusion reactions. Initial measurements did not agree with the theory but there is now experimental evidence that the neutrinos can oscillate between types so it looks like the theory may be validated. The light that comes from the sun only tells us what the temperature of the sun is and what the composition of the gases in the atmosphere are and a few other parameters mostly through spectral analysis. They both give us valid info, but the neutrinos give us more fundamental information

Because information of the inner processes of the sun's core takes about a million years to escape to the surface, and then another 8 minutes to get to the Earth. Neutrinos are not detained by the sun's body. The come directly from the sun's core to the Earth in about 8 minutes.

Well, neutrinos are ubiquitous and non-commital.
Light is a more "in-your-face" kind of event.
