Because it tastes good and is relatively fragrant. They can smell it from far away, so people like to put into traps to lure the mice.

Mice could also smell meat, but meat rots quickly and lures other kinds of nasty bugs and odors.

It was first used in baiting mouse traps because mice could smell it from far away. Sometimes people would even burn the cheese to give it a more potent smell. Cheese was the easiest food to mount on a mouse trap due to its putty-like consistancy. (Try mounting a nut on a trap!) It also would harden after mounted on a trap making it more difficult for a mouse to steal without setting off the trap. How's that sound?

Mice eat just about anything. Actually peanut butter is a better mousetrap bait than cheese.

It's soft and high in fat. They have a strong natural instinct to survive and foods high in fat can maintain them for much longer than something light. Same reason they like meat, peanuts, candy, etc. Something like lettuce which is mostly water can't keep them alive for long.

Cause all other food gives them the "runs" and they need the cheese to get regular again. Only in cartoons. cheese is not their food of preferance.

Well....It's food! They had actually rather have peanuts and things like that, but it's sorta hard to attach a pnut to the trap!
