The best MMORPG experience I've ever had is on ROSE online while its in beta, which isn't really anything special, but I had a good time never the less.
I've never got the chance to try WoW or Everquest, so I guess the best OUT OF the bunch I've tried is Ragnarok Online. Yes, the quests are quite rediculous, and it has very little appeal to Western gamers, but if you're aiming for PVP and War of Emperium (Group war + castle conquering), than that's the challenging, competitive part.

I play World of Warcraft, and even though I think it's great, it is NOT the best mmorpg game ever.
The number of subscribers is NOT an indication of how good a game is, it is an indication of how good the marketing is for it.
I'm going to try 'Unification Wars', as it seems to have much more depth than World of Warcraft, and I bet you dont have to deal with asian farmers ruining the economy either!

It's really a matter of personal prefferance. Here is a quick rundown:
World of Warcraft: Really good MMO, but repetitve.
Final Fantasy XI: For FF fans only. too difficult if you like to solo.
Guild Wars: Fast and action paced. Not favored by Heavy MMO gamers.
Everquest: Nothing beats olds-chool EQ...
Everquest 2: Just Eye-candy, rest is outdone by WoW.
