Bright yellow, usually. When they flower they are not very good to eat. They are one of the only vegetables that is a flower.

Broccoli will bloom into little greenish-white flowerettes. They really aren't good to eat, though-- kinda tough. How do I know? I have had broccoli flowerettes in my garden!
