the strut should never affect the ride height. the strut only controls spring oscillation (bounce).
unless you replaced the springs, and you said you didn't, the ride height shouldn't have changed.
unless the spring seats on the old struts were distorted downward. but this would be unlikely, unless you like to play dukes of hazzard with your car.

Yes, If the New struts are the Gas filled versions. As someone said, You may need to replace the rear Struts/Shocks to get the vehicle to be totally Level again.
Shocks and struts that are Gas Filled, actually raise the car a bit.

You may have to replace the rear springs. There is a slight chance that someone put the wrong struts on.

Usually, yes. The struts do not keep a vehicle raised, so it will settle. Make sure your springs are seated correctly in the spring perches.

Time to replace the rear springs if the front is now higher then the rear of the car. You rear springs are worn out

Did you buy the wrong ones? That sounds funny.....Did the springs seat in the sadle all the way?
Is there a jack stand under the car still?
