There are plus size seats on the Hulk also. I think they are in row 3 and 6. I like sitting in them. I am under 200 pounds but have wide hips and I find them better for me. There are several good points to this. My seat had two safety locks (like seat belts) and the ones next to me were not for larger people, they were just regular ones, which meant I could ride with my brother and his girlfriend. So that means if you do decide to go on, you can sit with your daughter.
Another ride I was on had plus seats, it may have been Dueling Dragons or shei kra (I know I was not in the larger seat for Shei Kra), but I'm sure I was told that there was one.
You will find, outside the ride, there are seats that you can check if you fit in, without any red faces of having to be told you don't fit when boarding. The Hulk has two outside, one regular and one for larger people, just make sure you are in the one with the double seat belt.
I know from being on coasters before, that they major problem isn't if you fit in the seat, but that your chest dimensions do not inhibit the safety bar. I am really big chested and I can get the overhead bar to click several times, so even saying you were quite a bit bigger in the chest would mean that you could get on. If in any doubt, just ask the person working to push it down really hard.
I know that is coasters, and you may not want to go on, but you have the option to. For other things, the principle is the same; lap bars (Jurrassic Park) have plenty of room (as it is just one lap bar- beware, its one lap bar per row). Find out what the restraint is like, and that will teall you what is and what is not suitable. The Mummy has seats outside to try.
However, I think that you will be allowed on just about everything, especially if sharing with an 8 year old for single seat belt rides like Bilge Rat Barges.
If all else fails, rides like Men in Black can accommodate wheelchairs (they have two cars that are specially designed), so if you don't fit into the seat, you can fit into a wheelchair that can then go on. That way you don't have to feel you are letting anyone down.
And honey, you don't need to explain why you are bigger.

As long as the safety harnesses click in place, you'll be fine. My mom is about your size and she's even been on the roller coasters there. By the way, if you really are a coaster lover and you don't fit the ones at IOA, go to Seaworld and ride Kracken. The coaster has plus-size seats.

At the beginning of each ride you will find physical restrictions posted for that ride I think you will be fine. Just make sure that if it is a ride with a lap bar and your daughter is in the same seat with you, ask the attendant to check the lap bar distance for your daughter to make sure that she is securely in.
