Im 16, and have an irresponsible mother who is unfit for supporting me. And she is also crazy...

So what are the rules and how-to's for emancipation, and if anyone knows them for the state of Arizona, that would help much as well.

Talk to your mom. Unless she is found unfit, I'm pretty sure she has to be willing to sign the papers to emancipate you. I would talk to someone at your school, like your guidance counselor. Maybe you can stay with a relative or something. My mother was also unfit, so my grandmother raised me.

Try searching online for the official website for the state of Arizona. I believe there is information here : http://www.azleg.state.az.us/ArizonaRevisedStatutes.asp?Title=8

Just be sure that you realize what emancipation means...You'll be living on your own, attempting to finish school, working to support yourself etc.

Yes you can, how is leagal stuff but you can. If what you say is true, you can make it happen and the courts will look at that IF very hard.
