according to the exorcism of emily rose movie, the preist said that 3 am was the bewitching hour (other than 3 p.m. being the hour of christ's death) when the demons of the dead come out for an unknown amount of time. when the person passed at 3 a.m. it could mean something like a demon had suceeded in his or her mission as to kill someone. But on a happier note, it could be that it was the person's time to go and the herat just gave out.
I would go with the heart gving out theory.
