I have bought several different sets of 100% cotton (300-600 thread count) sheets and all of them start to pill after a couple of months. Any ideas why? Any solutions?

Do not wash your sheets/pillowcases with any other type of laundry. No bedspreads, blankets and ESPECIALLY no towels.
The pilling is probably due to washing these items w/your sheets.

sateen sheets that are made from cotton sometimes pill depending on how the sateen is made.
Sateen is a weave. Many times Rayon is substituted for cotton but still called 100% cotton (Rayon pills). Other makers will use an acid wash to smooth out the threads, but this weakens the fabric, so it will shred faster. Switch to %100 Egyptian cotton is gets softer with each wash, but stays strong and doesnt pill.

I've found that if you have rough dry elbows, feet or hands it can cause the pilling. The rubbing of the material against anything rough can cause it. I put the sheets back on the bed after washing & use a safty razor and shave off the pilling/balled up fine threads that create tiny cotten balls. I also do this on sweaters, shirts even some decorative pillows that have the same problem. It really doesn't take long, it just shaves right off. Use a lot of lotion on your body and keep dogs & cats from clawing at the bedding.

Very interesting. I have never had an issue with 100% cotton sheets pilling. The only time I have had issues is with cotton blends. Sorry I could not be of more help!

That's wierd. Usually the higher the thread count the less likely that they will pill...in fact anything over 350 makes me sweat because it doesn't breath very much...do you have a hard water problem? I wonder if its the water in your laundry that's causing it.

I have noticed the same thing even with my higher thread count sheets which are not supposed to do that! I will watch your answers for a clue. Thanks for asking that.

Cotton doesn't pill... you've got some man-made fibers in there and someone's lying on the label...
