Saw (I agree with other answerers on this one)
Hellraiser (classically scary and gorey)
The Exorcist (scariest movie I've ever seen)
When a Stranger Calls (the original)
13 Ghosts (plot's kind of lame, but visual effects are REALLY disturbing- it's scary in the first 5 minutes)

The best: the shining with Jack Nicholson. If you haven´t see that movie, you cannot talk about scary movies again.

If you want to go with new ones, watch Hostel. It´s impressive. Saw was good, but Saw II sucked. the Grudge is a good option, but i´ll go with the japanese version instead.

I'll give you my scary supernatural picks 13 ghost and nightmare on elm street. this is not a movie but great anyway Supernatural season 1, it scares the crap out of me and make my boyfriend feel like he can protected me. anyway, it's great for cuddling.
