How about Freud and Jung's theories of psychoanalysis?
More recently, you could look up Cognitive Behaviour Therapy.
I think you might do better to read to read a general introduction to psychology or to sociology, or to aspects of these subjects that particularly interest you, than start by investigating theories. In the early days of social science people developed theories that they could use to develop ideas in little investigated subjects. These days there is an excess of empirical knowledge in both Psychology and Sociology so theories tend to have a different, explanatory, role.

There is one theory regarding the influence of nature and nurture on behavior: the reciprocal gene-environment model. According to this, some genes influence people to seek out environments or stimuli that will trigger genetic vulnerability. Such as, some people have a genetic vulnerability to getting depressed. But of those people that do have that gene, some might have an additional gene that causes them to seek out bad, stressful relationships that make them depressed.

Behaviorism is my personal favorite. It is the most popular school of American psychology.
In sociology, Thorstein Veblin is a great immortal. Not many of the people who quote him have actually read him. I have. The guy was a comedian who got taken seriously.
