I am doing well is the proper usage, but the most common response is...."I'm fine, thanks. How are you?"

Using the adjective "good" is incorrect.
Using the adverb "well" is correct.

You can say "I'm good", adjective is describing the subject (I),
but you have to say "I'm doing well", adverb describes the action (doing)
