I want to know about how to protect visitors in an work environment

You should be more specific in what kind of work environment and what kind of protection you are needing.

If you are asking about a construction zone, well then hard hats and have restricted areas where the visitors can't go that are too unsafe for them. If you are talking about a lab, then white coats and have somebody that knows all the MSDS and how to take care of accidental spills. If you are talking about a business work environment, a security guard and visitors passes. Same with schools. If you are talking about hospitals, usually visitors/ volunteers have to sign a wavier of confidentiality.

Otherwise have good insurance such as worker's comp that will cover accidents on employees or visitors.

Im sorry, but I do not know exactly what you mean. Do you mean from physical injuries, noise, or pollutions etc. or what the rights of visitors would be if they got hurt.
