At any Amusement park that closes for the winter the maintenance department does repairs and preventative maintenance on all the rides. They also have to inspect every inch of those rides to grantee that they remain safe for the riders. The rest of the departments start planning and getting ready for the next season from ordering the prizes to a new show or adding more food Items. It depends on how far north you live. Southern California and Florida parks usually have a few short off-season, if any. Disney is open all year I believe. Most amusement parks in the Midwest and Northeast are open by late April or early May. The park uses this off-season to do more extensive ride maintenance, new paint jobs for rides and attractions, replacing older sidewalks, and construction of new rides (construction is much faster and easier when the park is empty). If you join a roller coaster enthusiast club like ACE (American Coaster Enthusiasts) or something similar, they will have special off-season tours of amusements parks where they let you into areas that are usually restricted, like right underneath the coasters.

I don't know about La Ronde but at Parc Val Cartier in Quebec City (water slide park) they have winter activities planned (skating, sliding). I think most themed ride parks just close unless they have indoor facilities.
