I have Nero 7 Ultra. I Have whole seasons of tv shows to burn..... Isn't there a way for a DVD to hold more than 2 episodes?

Only option would be to use dual-layer DVDs or make all your episodes as VCDs, it'll be degraded quality but you can fit more episodes on a DVD and most DVD players today will play VCD content.

Also another option is Bluray. A Bluray disc holds up to 50 GBs of data but cost about $50/disc.

Double layer is an option, if your DVD burner can handle DL.
Double Layer CD can hold about twice as much as a "Regular" CD, but they cost about 3 times as much. Is it really worth is?

How about compression?
I'm pretty sure that Nero can do compression, but I don't know if that would save enough space to actually put another hour's worth of video on a single DVD.

Have you looked into "Blu-Ray" drives?
Blu-Ray disks hold about 5 times as much data (Video or whatever) as a regular DVD. A little expensive, though.
