Go south a bit to Dahab. There is a place where you can swim (with goggles) 1-2 meters from coral reef under your feet, then suddenly drops off to hundreds, like walking off a cliff, but awesome.
Go North. Fantastic hiking in mountains around Eilat. I recomment Mt. Shlomo if you're in good shape, Red Canyon if you're very relaxed, and anything in between, just ask around.
The hotel at Tabba also has activities and other water sports. I'm sure you won't be bored.

Why not cross the border and go to Jordan for a couple of days? Petra and the Dead Sea are amazing.
