For the most part, yes.
98% of the time, the games will make no differentiation between a PS1 dual-shock and a PS2 dual-shock controller. There are random times where playing a PS1 game on a PS2 can cause an unforeseen glitch that makes PS1 controllers not work correctly on the PS2. I believe this was an issue with Tekken 3.
For PS2 games, there are very few games that would whine about you not having a PS2 DualShock2 instead of the PS1 version, especially since that "pressure sensitive" ability was always so gimmicky from the start. I've played many games that featured pressure sensitivity and it made no difference whether I tapped or held down a given button, or whether I was playing with a PS1 or PS2 controller.
Only way to know for sure is simply to experiment.

For some reason when I used to play on my PS2 it would never work with the original PS1 controllers unless I had a PS2 controller in the first port, and then an orginal for the second port.

The regular Sony controllers seem to work okay, but I have an old Namco neGcon controller which I used to play Ridge Racer 4 with on the PS1, and this doesn't work with my Gran Turismo games on the PS2.

You can use the PS1 controller - this is what I did back in 2001 when I got the PS2.

Some of the controllers will work on the older ps2 machines. Remember tho that a lot of the newer games need the analog sticks as well as the directional buttons.
Also keep in mind that the controllers may not work in the newer (flat) ps2 machines.
