There are many ways to look at one constitutes knowledge. One way is through use of Language. One makes a proposition (a sentence) and when a sentence matches the reality, then one can be said to have a knowledge. In short, it can be a matching game.
If you reduce knowledge to purely memories or some sort, then by definition, what's in your head so to speak is your knowledge.
As to the question of how we come to achieve it; that's a very hard question. No mechanical process seems to provide an adequate answer to that unless you are willing to settle with an answer a neuro-physiologist usually gives.

What we achieve is wisdom out of knowledge... !
We acquire knowledge, not achieve it.
Knowledge is just processed information , again a meaningful data, waiting to be observed by an intelligent person to draw conclusions from !

Knowledge is the sum of your thoughts and expiriences. You achieve it by thinking and expirienceing. Knowledge is a loose term in it's own way, like many words. Knowledge is power, but what is knowledge if no one understands you, is knowledge now powerless?

Knowledge is a bunch of information that is told to you, or that you can find out through mediums like books, tv, other people, pictures and school, different from wisdom in that wisdom is gained through experience. Wisdom is always useful. Knowledge is rarely.

Knowledge is the accumulation of facts (or, if you would excuse the redundancy, it is what you know). Discerning and understanding facts though, requires wisdom. Knowledge comes about by learning, where as, wisdom comes about from experience.

In other words, the term knowledge is used very loosely. Don’t worry about it. From our past experiences, we are getting somthings are correct and somethins are incorrect. when we are in present activities we should be apply the (past experiences) getting things correct or incorrect is knowledge.
Simply we can say the presense of mind is knowledge.
