i own a house built in the late 1890's and am curious as to what kind of stove pipe, or posibly chimney, would have been used when the house was first built, and would there have been a kitchen, or would they have cooked on the stove?

I was born and raised on a farm in Upstae NY, in a house that was at least that old, and had a kitchen as well as just a woodburning stove to cook on/in.

The "chimney" was likely double walled, and either galvanized steel, or some alloys that wouldn't melt at high temps.

Is this idle curiosity, or an effort to recreate some levels of per modern convenience?

OUR stove never slept, never truly cooled, and always had either food cooking on or in it, and/or water boiling on it.

My grandmother, a Lakota native never had the benefit of a thermometer, or dials, gauges, timers, lights, bells,or whistles, yet created the best meals I've ever eaten.

An aside: When she was very old, my mother and father convinced her to leave the farm and moved her into a small house in town. In that house everything was bright, and the kitchen was large. In it was a new refrigerator and gas stove. She insisted on having her wood burning stove installed, and never once used the new stove inthe opposite corner of the kitchen.

Depends on the chimney and what shape it's in. You call a chimney sweep to get a chimney checked for condition. The chimney that came with the house may have been adequate for a wood fire in 1911 but may not be so now.
