Green peppers have more of a bite to them. Red peppers are more mellow.

Depends on the taste that your going for they are both great, the red peppers are sweeter thou

I usually cook with both but red give the dish a swetter taste while green give the dish more of a bitter taste

both, and while you're at it throw in some yellow bell peppers too. It really makes a dish colorful!
