It depends on what the experiment is.

Often times you set as a null hypothesis a statement of what you want to disprove.

Then you run an experiment, the results of which you hope would only occur with a low probability give the null assumption was true. If the probability is very low, then you have a good reason to reject the null (which usually is what you wanted all along).
