Subtracting the same quantity from both sides of an equation keeps both sides equal.

I believe it is the subtraction property of equality

Angle1 + angle 2= 180. Subtract angle 1 from both sides:
Angle 1 + angle 2 - angle 1 = 180 - angle1
angle2 = 180 - angle1

Not sure what you're asking. Not sure what "property" you want us to state. It's just sort of is what it is. You subtract the same thing (in this case angle 1) from both sides of the first equation to get your second equation.
