My Spring Break is in mid-March. (Preferably not somewhere too chilly, but not necessarily a beach)
Also, I am NOT a partier.

I remember going to Prague and Budapest around that time. Salzburg and all of Austria is interesting that time of year. It isn't warm but not too cold and even some of the flowers are starting to bloom. If you have a week you could probably see two of those places. I love Salzburg in spring and there are some interesting sites. You could probably even get in Salzburg, Vienna, and Prague or Budapest.

The other option would be to go to Italy. You could do 3 or 4 days in Rome and then take a train to Venice or Florance. It is a bit warmer then Austria and Eastern Europe. To be honest, if it really interested you, you could probably spend the whole time in Rome because there is so much there and you can take day trips to other towns.

I went to spring injury each and in keeping with annum and traveled each and every time.. Cancun Jamaca Punta Cana Puerto Villarta the final occasion spot became Cancun for going dancing/evening life Puerto Villarta Had the final beaches and relaxing activities to do via day, some evening life yet no longer close to as much as Cancun Jamaca wasnt fairly lots relaxing, however there have been marvelous places to flow and see like the YS falls and Dunns River falls.. Punta Cana became an outstanding time standard yet I nonetheless might p.c.. Cancun or Puerto Villarta previously going back to Punta Cana
