Are you taking the plug out, of the bottom of the engine?

Drain the oil, install the drain bolt and fill it with the required amount of oil.
Using a clean oil drain pan, drain the oil again. Does the amount you put in, drain out? Since the drain pan was clean, you can poor that oil back in the motor.
Your engine might be burning oil. Since it doesn't hold much to begin with, it just seems like all of the oil isn't coming out. Check your oil before and after each ride. Add when necessary.

You didn't say what year your quad is. If it has an oil level sight glass, the glass is probably dirty inside, giving the apperance that it has oil inside.
