I think one of the best soundtracks ever is Waiting to Exhale. Great music legends on there along with up and comers, well for the time anyway. Probably the only soundtrack I still listen to.

The Phantom of the Opera...best soundtrack EVER! you only need to listen to that and you know the whole story...so cool!
Chicago soundtrack is pretty cool aswel but i didnt like the bonus tracks on it...they weren't even in the film!
