Just tell your store manager that since school is starting you need all evening shifts now, and that you are sorry. And you will understand if s/he can't keep you on the schedule since you were hired for a different time of day. And you could possibly transfer to a different store that needs night people.

Maybe you don't need to quit -- you could sit down with your employer and ask them if there was anyway you could work the night shift -- explain your situation, maybe someone is looking to get on for the day shift.... Good Luck!
And if you have to quit, by all means give a two-week notice -- Make sure you do it face to face -- give it in writing -- giving your regrets and make sure you put in your notice that the reason you are quitting was due to your having to return to school.

From what I understand, Starbucks is pretty good about keeping good, trained employees. You could possibly ask for a transfer to another location (if it is even a possibility for you). Or you could talk to them about the fact you now have school, would like to keep your job however you have educational priorities and it would be beneficial for them to keep you (explained that you are trained and you are a dedicated employee...) but you can only work evenings. I am sure something can be worked out. Good luck.

Try talking to your boss. Explain your situation. If he won't let you change shifts, then try switching jobs. It is not worth fighting over. There are lots of other job options out there.
