Rub the outside with vegetable oil (or PAM) and it will last twice as long. You can easily make it past Halloween if you do that now.

Rub Vaseline on the edges. It will keep them from drying out and rotting.

You have 3 options.
1. Put it in the freezer.
2. Submerge it in vinegar, and cover the exposed cuts in vaseline.
3. Paper Mache it.

Bake that thing on low heat, then spray with a highly flammable varnish. Just don't put it on your head or you might pass out or light up if you get near an open flame.

Draw on it instead carving. I suppose you could lacquer it with some water sealent if you really wanted to. If you choose to laquer it you'd need to dry it first...so fill it with salt and bake it in the oven on very low heat. But that will wrinkle it.

I just did jack-o-lanterns with my grandson last night and my wife put vaseline on all the cutouts.
I have no idea if this works...........
We'll see in a week or so.
