You will probably have to change the DNS servers yourself with the registrar (the place you got the domain through). Most of them have an online form you can log into.

If your last provider did this for you, you may need to ask them for the details.

The MX should be taken care of by your new provider, once you have the domain's DNS pointed at the new provider's servers. They will give you the right information.

You new hosting service should do that for you once you sign up.
