What does 'play out' mean in?

So we chose a single task---find a book on library design---and played out a day in the life of a customer.

I would say that you would step into the customers shoes and go through the motions that the customer goes through on thier end of the transaction.

Played out means it has run its course.

I agree with lifechanges. You could substitute "acted out" for "played out."
