My understanding is the pressure of the bow wake is like a scratching post for them. It feels good, so they do it!

Dolphins & porpoises are social creatures - they are always in pods & are very close knit families. They swim with the boats for fun. The famous underwater diver Jacques Cousteau would swear that they swam & leaped in the air all about his boats just to show off & enjoy the company. Maybe the see the boat as just another large dolphin?! I love to watch them, could watch them for hours on end . . .

They're riding the Bow Wake.
When a boat moves through the water, it pushes the water in front of it out of the way. This creates a small wave in front of the boat.
The Dolphins like to surf this wave. They're just playing, having fun.

I think they use the boat as a herding device for catching fish.

It also may just be fun to try to stay ahead of the boat.
