It's caused by an enzyme called polyphenol oxidase, also known as tyrosinase.

Some varieties, such a Golden Delicious, have had this enzyme bred out of them, so that they look better in the shops.

this is caused by free rads or oxygen atoms. they react with the flesh , helped by enzymes

can prevent or slow it by using lemon juice..
