How about Castle Neuschwanstein, the Bavarian castle (the fairytale type castle, looks a bit like the Disney one...)
Not sure what I would do with all the space, and I am sure the heating bills would be astronomical though.

I'd have to say Kinnitty Castle - Kinnitty - County Offaly - Ireland, if they hadn't turned it into a Bed and Breakfast! I love the fact that it is "haunted"!!
