They will take a break for a few weeks and then they will begin testing the new cars for the next season. They spend time in different climates to test the new technology and see how it works in the various different places.

They can test over several thousand miles during the testing season

They'll get a few weeks to spend with family and friend before returning to thier teams.
Some drivers (like Alonso and Raikkonen) will be trying to get released early from their current team so they can move on.
They'll have PR duties to deal with and there's probably a couple of Driver Union meeting as well.
Fittness levels will have to be at top notch so there'll be pleanty of visits to the gym, swimming pools, etc to do training.
And of course there's the testing of the new car. This will include visits to the teams base to see how things are moving along (and rasing moral of staff there).

There might be one or two other things but I think that's the basics.

They all have a small break but then start to work hard for the next season, preparing their cars and engines, having many tests and etc. There is no break for those who want to get to the top, just hard work.

Testing, testing, testing, more testing, a little vacation time, some personal appearances, and then some more testing before finishing up with some testing. I hear these guys put more miles in during testing than they do during the whole season. I wish I could remember the actual number of testing miles, but I was astonished to find out how much they test. Unbelievable.

Actually there is only 4months break (Nov, Dec, Jan & Feb). All the team have to shutdown all the research lab and testing for about 4weeks for the FIA to investigate. They will have a private ceremony for award presentation that another 2 week. They will have only a month vacation and the rest of the time they will be back to testing in their new car or new team.

They get to relax a little but still need to keep their fitness levels up - but at a slightly reduced level. They will do promotional work for their sponsors and the car makers etc. They will also be testing, testing, testing and working on the cars for next year - five months isn't that long...

They have important things to do such as buy a bigger house in Monaco and cavort about on their yachts with scantily clad starlets.

They probably also have a period of testing for the new seasons car and promotional appearances.
