Its just an expression, a figure of speech. I dont think they have been lying all this time. Good point though.

No i don't think they were necessarily lying but they want to seem like they are opening up to you to reveal some important fact.

Its another way of being a big head ... it means that every thing they say has to be true because they are never wrong

I am pretty sure that they don't know why they say it. But, you could take it to be a "I'm very serious, listen to what I say" type of thing.
