Because the olive branch symbolizes peace, and the United Nations is all about trying to keep the peace.

It represents peace.

I believe this meaning was taken into western society by the early story about Noah being brought an olive branch as a sign that there was dry land.


By the way - the original olympic games gave Laurel leaves as a sign of victory (not peace). Considering how ubiquitous olives are in Greece, I think there is a misconception about that.

An olive branch is what the dove flew back to Noah with to indicate that there was dry land. How the olive tree survived is anybody's guess, but both "dove" and "olive branch" symbolize peace.

I believe it's a symbol of peace, one given to the winner of the first olympics to celebrate good sportsmanship and competition. That would be its origin; it might be related to the goddess Pax.
