The first place you should check is their website assuming they have one. If they do not you have a few options.

If you are doing this for research and privacy is not an issue, your best bet would be to contact their Human Resources department and let them know the reason and they may just send it to you.

If privacy is an issue, such as you are asking for a personal reason, you may want to setup an email address that doesn't have your name in it and email the company requesting they send it to you. I do not know for sure if they have to though unless you are an employee or a legal entity.

I am fairly sure that as an employee or previous employee you have legal rights to request a copy of it at any time.

A particular company's policy and procedure would only be found online if they post it there. If the company is computerized and has its own intranet and you are alllowed access, then it should be found there. Here's a generalized guide to get you started:

every employee should be given an employee manual... read it

if you dont have one get it from your HR office or talk to someone in HR so they can give you a copy of the policy or counsel you on it
